On the gastronomic map of Prague, a place is emerging that attracts with its aromas and colorful cuisine. The Mexican restaurant, the latest project from the gastro alliance Together, brings a Mexican atmosphere to the dynamically developing district of Prague. Guests can look forward to handmade corn tortillas, rich mole, fresh ceviche, and BBQ meat prepared in a smoker.

Welcome to Mexická! Step into a world where the air is filled with the aroma of roasted meats, peppers, freshly squeezed limes, and spicy salsas. The new restaurant of the gastro alliance Together, which includes establishments such as Sia, Bruxx, Brambory, Vinohradský Parlament, Potrefená Husa in Pardubice, Cukrář Skála, Bistro Sisters, and Foodway catering, brings the authentic atmosphere of Mexican cantinas to the former Holešovice brewery – lively, wild, and especially full of flavors.

To ensure the experience is as authentic as possible, a group of people who understand Mexican gastronomy like no one else has gathered in the kitchen – chefs directly from Mexico and Latin America. They brought skills passed down through generations, techniques from the street markets of Mexico City, and experience from traditional Mexican restaurants. “Finding people who truly understand this cuisine was key for us. That’s why we brought chefs directly from Mexico and other Latin American countries to ensure the most authentic experience,” says David Petřík, co-owner of the gastro alliance Together. Of the twenty-member team of chefs, only three are Czech – the rest are native Latin Americans who brought recipes straight from home.

The gastro alliance has been working on the entire project for over 4 years. It is overseen by Jiří Štift, an experienced head chef of the restaurant Sia, whose signature is clearly visible in Mexická. Daily operations in the kitchen will be led by head chef Petr Vlk. Together, they embarked on a culinary journey to Mexico City to learn from the best. Under the guidance of renowned Mexican chef Alejandra Kauachi, they perfected traditional techniques and now bring Mexican cuisine directly to Prague. “Mexican gastronomy is fascinating in its depth of flavors and preparation techniques. We want to show guests more than just Tex-Mex. We will offer authentic recipes that we learned directly in Mexico,” says head chef Petr Vlk.

The new restaurant Mexická is based on the authenticity and diversity of Mexican cuisine. Guests can look forward to homemade tortillas, fresh ceviche, and slowly roasted meats prepared in a smoker brought from Texas. Each of the three kitchens in the restaurant focuses on a different type of dish to offer a comprehensive gastronomic experience.

In the first kitchen called Taco station, fresh tortillas and tacos are prepared in traditional combinations, such as beef suadero, pork carnitas, or BBQ turkey breast with mole Poblano.

The second kitchen – Ceviche bar – focuses on seafood and ceviche, which is prepared from fish and shrimp sourced from a special tank located directly in the restaurant. Other specialties include scallops with coconut tiger milk or mussels in achiote marinade.

The third kitchen, called Pec & grill, is dominated by grilled specialties and slowly roasted meats. The meat is prepared using traditional methods in wood-fired ovens or in a smoker, which gives it a distinctive flavor and juiciness. Among the vegetarian dishes, grilled bimi broccoli with Romesco sauce or cauliflower with mole Poblano and pumpkin seeds stand out.

Guests can also look forward to the largest bar of all the Together establishments, where they can enjoy a wide selection of cocktails, including classic drinks like Margarita or Paloma. The space also includes a section called Cukrárna, where desserts such as crispy churros with hot chocolate, baked pineapple, or Pan tres leches will be prepared.

“With Mexican cuisine, people should not be afraid to explore new flavors. I recommend starting with the homemade tortillas and the meat prepared in our Texas smoker. Seafood lovers will then fall in love with ceviche made from the freshest fish and shrimp. And for a sweet ending? Definitely churros with hot chocolate,” adds Petr Vlk.

The environment of the restaurant will draw guests into another world. The interior, designed by architect Václav Červenka in collaboration with the studio 2020architekti, draws inspiration from traditional Mexican culture, Aztec art, and street art. “The atmosphere arises from the tension between traditional elements of Mexican culture – from Aztec art to street graffiti – and the contrast between classic materials and modern technologies. It is definitely not a plastic cactus with a sombrero, but an authentic, modern restaurant with a sophisticated concept,” says Václav Červenka, architect of Mexická. The entire construction was overseen by general builder Petr Moravec from INTEKO Sedlec.

Among the main visual elements are hand-carved reliefs, massive columns decorated with Aztec motifs, and golden skulls that enhance the atmosphere of the space. The centerpiece of the interior is a massive Aztec staircase coated in epoxy, the production of which required two trucks of stone slabs and two tons of epoxy.

The restaurant has a total capacity of 310 guests, and there are plans to open a garden in the future. The space will also be enlivened by a piazzetta with a Mexican stand, where guests can listen to authentic music and immerse themselves in the true atmosphere of Mexická.
