The 1890 Restaurant & Bar at the NH Collection Prague Carlo IV has just introduced a new à la carte menu. Under the guidance of Chef Josef Votoček, the offering celebrates fresh seasonal ingredients and a modern culinary approach focused on sustainability.
The menu brings the lightness and flavors of summer – from fresh garden-inspired appetizers to grilled specialties and elegant desserts. Highlights include, for example, perch ceviche with lime, avocado, and grapes, or the popular mix & match grill concept, where guests can choose meat or fish and customize them with sauces and sides to their liking.
The star of the season is the lamb chop with chimichurri, grilled pepper purée, onion chips, and potato fondant – a dish that embodies the philosophy of the 1890 kitchen: sincere flavors served with nobility. To conclude, a sweet note in the form of a white chocolate dessert with banana and hazelnut perfectly wraps up the experience.
“We wanted to offer a menu that reflects the season – fresh ingredients, lighter textures, and an emphasis on grilling,” says Chef Josef Votoček. “Sustainability is not a trend, but a fundamental value that is reflected in every dish we serve.”
Soon, a seven-course tasting menu with carefully selected wine pairings will also be available, offering a guided journey through seasonal flavors.
